Healthy Breakfast Muffins

I was sitting in my kitchen eating breakfast yesterday morning and noticed I had two ripe bananas and immediately thought how I can put these to use and not in the trash then it hit me I've been wanting to try some breakfast muffins for a while. 

So I searched Pinterest high and low for a recipe and didn't find one I absolutely loved so I used a little bit of what I saw and improvised the rest of the recipe.

I can see myself making a batch on Sundays and grabbing one to go during the week with an apple and some tea. Yummy! 

Result were the yummiest, moist breakfast muffins ever!  


2 1/2 c old fashioned oatmeal 

1/2 tsp baking soda

1 1/2 tsp baking powder 

1 tsp vanilla 

1 c Plain Greek Yogurt 

1/3 c egg whites (about 2 large egg whites) 

1/3 c low fat creamy peanut butter 

1/2 c honey 

1-2tbs flaxseed 

2 ripe bananas (mashed) 

Chocolate chips optional 


Blend all together in food processor or by hand 

Preheat oven at 375 degrees 

Bake for about 15-18 mins or until tooth pick test is passed

**makes about a dozen medium sized muffins**
